If you care about using a browser for actual day-to-day work, Shift at least tries to give you something beyond the bare minimum by letting you pin your favorite apps in a sidebar and switch between accounts easily. Chromium, on the other hand, is just the raw foundation that powers other browsers and doesn't offer any of the features or conveniences you'd actually want out of the box.

Shift might feel dated and doesn't really stand out against more modern productivity browsers, but it still gives you a working UI and some quick action features. Chromium is only for people who want to tinker with the engine itself, if you just want to browse or get work done, you'll find it missing everything you'd expect from a finished browser.

So if you need a browser to actually use, Shift is the only one here that makes sense. Chromium is just the skeleton, not a real option for most people.
