Brave actually gives you a full browser with privacy features, built-in ad blocking, and crypto integrations, all layered on top of the Chromium engine, so you get the extensions and compatibility you expect from Chrome-like browsers. Chromium, on the other hand, is just the open-source foundation that powers browsers like Brave, Chrome, and others, but using it directly doesn't add anything practical for most people, it's missing the conveniences and user features you'd actually want in a daily browser.

If you want a browser you can actually use out of the box, especially with privacy in mind, Brave is the real option here. Chromium is only relevant if you want to tinker with the raw tech behind the scenes, but for everyone else, it's not even a real choice.
